Many people refer to all Dark Sweet cherries as “Bings”. Though it is true that a good portion of the cherry crop is the Bing variety, there are many other dark red varieties that have been developed over the years. These other varieties have been developed to mature either earlier or later than Bings and in different locations (higher in the mountains or out in the deserts, etc.) so that red sweet cherries are available for a longer period of time. Regardless of the variety, dark red sweet cherries are still the diamonds of summer.
